HISTORY OF THE DRINK

Since ancient times, honey has been considered a golden treasure and a guarantee of good health on our land. The Medovyi Spas honey factory revives and brings the traditions of honey production to a qualitatively new level with the help of modern technologies.

"Medovukha", "Drinking honey", "Honey brew", "Honey", "Intoxicating honey" - these were the names of honey alcohol in the past. Honey drinks almost went into complete oblivion. However, Medovyi Spas managed to give people the opportunity to taste an authentic Ukrainian drink that combines ancient recipes of ancient honey makers with production on the latest equipment.

A MODERN COMPANY ON THE WAY TO REVIVING TRADITIONS

In today's world, it's hard to surprise a consumer with a special product. This also applies to the alcoholic beverage market. It is difficult to find a truly national, traditional drink. The Medovyi Spas honey factory is reviving the traditions of honey production and introducing the honey intoxicating drink Sikera to the market.

Sikera is an alcoholic beverage produced by fermenting honey, fruit and berry juices of direct extraction without adding sugar and alcohol.  The harmonious combination of these components gives the drink a delicate floral aroma, fruity character, thick texture and distinct aftertaste.

"Honey, which is in abundance in Ukraine, plays the first violin in the production of Sikera. The second ingredient is direct-pressed juices of black and red currants, chokeberry, gooseberry, apples, pears, and cherries.  Using the fruit and berry palette of Ukraine, the meadery has recreated this drink, which is rich in trace elements, as all the beneficial properties of honey are preserved during fermentation.

The fruit and berry bounty of Ukraine gives this drink its rich flavor and colorful presentation. Back at the beginning of the last century, Lviv University professor Theodore Ciesielski argued that countries with our climate can compete in the wine market only by producing drinks made from honey and fruit.

Intoxicating honey has been known since biblical times, and according to written records, the production of honey drinks was extremely popular in the territory of modern Ukraine. The variety of ancient

recipes for mead is impressive. People enjoyed honey-based drinks almost until the end of the 18th century. Over time, the popularity of intoxicating honey was replaced by affordable and easier-to-make alcoholic beverages. Nowadays, however, it is possible to revive the production of honey wine by combining ancient recipes with modern production technologies.

"Medovyi Spas" AND ITS PRODUCTS

 

Medovyi Spas was established on October 14, 2018 in Brovary, Kyiv region. The equipment of the honey factory is certified according to HACCP and ISO certificates, and an Italian wine bottling line has been installed. The production capacity is 350,000 bottles per year. The production of honey drinks can be promising, as the popularization of honey wines is gaining momentum in the world. And since Ukraine is one of the world's top five honey exporters, honey production can become an interesting local business.

FEATURES

Medovyi Spas was one of the first to create the country's authentic drink. The heady drink is made using the technology of fermenting honey and natural cold-pressed juices without adding sugar, alcohol, flavors or colors. Thanks to the fermentation technology, the drink retains all the beneficial trace elements, enzymes, vitamins, and antioxidants of honey and juices.

 

LICENSES AND CERTIFICATES

All of our products are made to all standards.

Established in 1947, the International Organisation for Standardisation (ISO) to ensure safety in food production guarantees safe food, because the need for food security has never been greater. And to demonstrate their commitment to food safety, many food producers are seeking certification. This increases consumer confidence. The ISO 22000 standard is given to any organisation that is part of the "field to fork" food supply chain, and provides the consumer with a clear confirmation that the manufacturer is responsible for sanitary and safety requirements.
     It is difficult to implement the requirements of these standards, but Medovyi Spas passed a complex audit and received the ISO 22000 standard in 2019. And in 2020, the meadery passed a more complex audit and switched to the new, more stringent standard 22000:2018. And every year, the meadery is audited and confirms this standard.
