Pet-Сat is a low alcohol natural drink of natural fermentation of linden honey from the Kaniv Mountains at 8 degrees, without the addition of alcohol and sugar, with a restrained perlage and crisp acidity. On the palate there is an intense aroma of flowering linden and notes of beeswax.
Pet-Cat was created using the pre-champagne "ansestral" method, which arose long before the invention of secondary fermentation, which is used to create champagne - about five hundred years ago. Ansestral, as the oldest style of sparkling, is now experiencing a renaissance. Unlike the classic method, which includes 2 stages of fermentation, here the drink ferments only once. Fermentation continues in the bottle: carbon dioxide is released and remains under the cork until it is opened. The degree of alcohol is lower than other wines with bubbles. The pressure is also low, so the perlage is gentle and less intrusive. Most often, the drink is not filtered, which means that in a glass the sparkling wine will be opaque, with a yeast sediment. But it has a bright taste. The aftertaste of this version leaves fresh tones of apples and reminds of the tender time of flowering orchards.
Pet-Cat is valued for its natural production method, low degree and incredible ability to blend perfectly in any gastronomic situation. Fragrant and extremely dry sparkling without added sugar, ideal for spring.
Pet-Сat is so delicate that it is closed not even with a cork, but with a metal “crown”, like beer, and released into the world in spring to drink here and now.
